I watch a couple on YouTube, that may be close. It’s called boat time and their channel is not about being vegan, but they are and it sort of comes up as they travel a lot.
They live on a canal boat and are off grid, but not remote. I’m not positive that’s what you’re looking for, but it’s kind of a neat little vlog.
